The BEST chocolate protein muffins!

Because I cannot live without some chocolate in my life!

I’ve played around with lots of protein boosted dessert recipes before but I always end up with shiney, spongey, gross results. On Sunday I was craving chocolate and feeling brave so I decided to try to put together my own chocolate protein muffin recipe, and damn! These are so freakin’ good and really easy to make. Here’s what you need:

 

Combine:

½ ripe avocado

1/8 cup coconut oil

⅔ cup unsweetened cocoa powder

4 egg whites

3 scoops chocolate protein powder

4 tablespoons agave nectar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup rice flour

1/4 cup almond meal flour (optional)

2/3 cup unsweetened applesauce or vanilla greek yogurt

1 cup unsweetened vanilla almond milk

 Blend it all up in your blender until smooth then

Stir in ¾ cup dark chocolate chunks or cocoa nibs. I actually use a blend of both.

Spoon into silicone muffin pan and bake at 350 degrees F until toothpick comes out clean and enjoy!
